Picking Blueberries at Ever After Farms










































We used our blueberries to bake blueberry breakfast bread. Below is a complimentary recipe for you to try!

Lemon Blueberry Bread Recipe:

Ingredients and Instructions:
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cane sugar or 6-8 packets of stevia
1/2 cup vegan yogurt
3/4 cup plus 2 tbsp applesauce
2 tablespoons fresh lemon juice
Zest 1 lemon
1 teaspoon vanilla extract
1 cup fresh blueberries and 2 teaspoons all-purpose flour

Preheat oven to 350 degrees. In a bowl, toss the blueberries with the 2 teaspoons of flour. Set aside. 
In a separate large bowl, whisk together the flour, baking powder, and salt. Mix in oil, sugar, vegan yogurt, applesauce, lemon juice, lemon zest, and vanilla extract until fully combined. 

*Add the dry ingredients to the wet ingredient and mix until combined. 
Fold the blueberries you set aside into the batter. 

Pour batter into 9x5 coated (nonstick) pan and bake for 50 minutes or until a toothpick inserted into the center comes out clean. 
Remove from over and allow to cool. 

For the Glaze:
1 cup confectioners sugar
2 tablespoons fresh lemon juice

To make the glaze: Whisk together confectioners sugar and lemon juice. If mixture is too thick, slowly add one more tablespoon of lemon juice.
