Springtime brings us to Ever After Farm in Mims, a delightful tradition where we handpick our succulent blueberries. As we arrive, we are greeted with a generous bag where we collect our blueberries and, once finished, weigh them to pay. The friendly staff is always ready to assist us with any queries, and they even offer educational programs tailored for homeschool and school groups. 


Additionally, you'll find a charming petting zoo housing chickens, adorable ponies, and even a miniature donkey. As if that wasn't enough, we also embark on a delightful ride around the Farm, trailing behind a tractor that pulls a cozy hay wagon. It's a beautiful experience that combines fun, learning, and the joy of harvesting nature's sweetest treasures.

Here's a delightful recipe just for you to experiment with! Lemon Blueberry Bread Recipe:

Ingredients and Instructions:
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup cane sugar or 6-8 packets of stevia
1/2 cup vegan yogurt
3/4 cup plus 2 tbsp applesauce
2 tablespoons fresh lemon juice
Zest 1 lemon
1 teaspoon vanilla extract
1 cup fresh blueberries and 2 teaspoons all-purpose flour

Preheat oven to 350 degrees. In a bowl, toss the blueberries with 2 teaspoons of flour. Set aside. In a separate large bowl, whisk together the flour, baking powder, and salt. Mix in oil, sugar, vegan yogurt, applesauce, lemon juice, lemon zest, and vanilla extract until fully combined.

*Add the dry ingredients to the wet ingredients and mix until combined. Fold the blueberries you set aside into the batter.

Pour batter into a 9x5 coated (nonstick) pan and bake for 50 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool.

For the Glaze:
1 cup confectioner sugar
2 tablespoons fresh lemon juice

To make the glaze: Whisk together confectioner sugar and lemon juice. If the mixture is too thick, slowly add one more tablespoon of lemon juice.
