Picking Blueberries at Ever After Farms in Mims
Every spring we visit Ever After Farms in Mims to pick blueberries and enjoy a great day out on the Farm. There is a small petting zoo with chickens, ponies, and a mini donkey and we ride around the Farm behind a tractor pulling a hay wagon. We used our blueberries to bake blueberry breakfast bread. Below is a complimentary recipe for you to try!
Lemon Blueberry Bread Recipe:
Ingredients and Instructions:2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cane sugar or 6-8 packets of stevia
1/2 cup vegan yogurt
3/4 cup plus 2 tbsp applesauce
2 tablespoons fresh lemon juice
Zest 1 lemon
1 teaspoon vanilla extract
1 cup fresh blueberries and 2 teaspoons all-purpose flour
Preheat oven to 350 degrees. In a bowl, toss the blueberries with 2 teaspoons of flour. Set aside. In a separate large bowl, whisk together the flour, baking powder, and salt. Mix in oil, sugar, vegan yogurt, applesauce, lemon juice, lemon zest, and vanilla extract until fully combined.
*Add the dry ingredients to the wet ingredient and mix until combined. Fold the blueberries you set aside into the batter.
Pour batter into a 9x5 coated (nonstick) pan and bake for 50 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool.
For the Glaze:
1 cup confectioners sugar
2 tablespoons fresh lemon juice
To make the glaze: Whisk together confectioners sugar and lemon juice. If the mixture is too thick, slowly add one more tablespoon of lemon juice.
