Here's a delightful recipe just for you to experiment with! 

Lemon Blueberry Bread Recipe:

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup cane sugar or 6-8 packets of stevia
1/2 cup vegan yogurt
3/4 cup plus 2 tbsp applesauce
2 tablespoons fresh lemon juice
Zest 1 lemon
1 teaspoon vanilla extract
1 cup fresh blueberries and 2 teaspoons all-purpose flour

Preheat oven to 350 degrees. In a bowl, toss the blueberries with 2 teaspoons of flour. Set aside. Whisk together the flour, baking powder, and salt in a separate large bowl. Mix in oil, sugar, vegan yogurt, applesauce, lemon juice, lemon zest, and vanilla extract until fully combined.

*Add the dry ingredients to the wet ingredients and mix until combined. Fold the blueberries you set aside into the batter.

Pour batter into a 9x5 coated (nonstick) pan and bake for 50 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool.

For the Glaze:

1 cup confectioner sugar
2 tablespoons fresh lemon juice

To make the glaze: Whisk together confectioner sugar and lemon juice. If the mixture is too thick, slowly add one more tablespoon of lemon juice.
